hmm... well personally I love Hellsing (though I prefer the manga), Gungrave, and Saiyuki (again I like the manga better). I think you might like Kyo Kara Maoh! and Samurai Deeper Kyo. ^_^
do you know there is new show about Kyou Kara Maoh, after the 78 episode there is new one now.. I saw it ... |

Full Metal Panic; so far there is 2 season.
the scene you descripe, if I remember correctly I think that is more likely in Full Metal Panic; Fumoff.
it is kinda spin off show. but it's more hilarious that the actuall anime.
