Sweet Potato Wedges
Gas Mark 5
Sweet potatoes (one per person), each cut lengthwise into 6 wedges
2 tsp vegetable oil
1/4 tsp paprika
1/8 tsp garlic powder
Black pepper
1. Place potatoes in a bowl. Add oil, paprika and garlic powder. Season to taste with pepper. Toss to coat. Transfer to baking tray. Bake for 25 minutes or until tender and golden, turning once.
Bananaberry Smoothie
1 banana
1 cup fresh or frozen berries (any combination)
1 cup milk or vanilla-flavored soy beverage
3/4 cup lower-fat yogurt (vanilla or other flavor that complements berries)
Blend & drink!

Pudding’s High-Protein Vegan Strawberry Pudding
* 1 lb. firm silken tofu
* ½ cup cool water
* ½ cup fresh halved strawberries
* ½ cup sugar
Cube the tofu and place in a food processor. Blend on high until smooth. Add water, half of the strawberries, and sugar. Blend until all lumps of powder have disappeared. Use remaining strawberries as a garnish. Refrigerate for 1 hour and enjoy!
