everybody loves portobello mushroom ravioli. That's good stuff, and it can be found at just about any decent-sized market.

you could do allsorts of stuff with rice. i like playing around with different spices and herbs to make nice rice dishes. for example, you could fyr off some garlic and a bit of chilli and then add some rice, move it around in the oil for a little bit, and then add stock (or just water), and sometimes a bit of wine for flavour, and just keep enough water so it sizzles, and keep it stirred, and it should come out really nice. or you could do it with herbs in, or anything you like.

Pasta sauces are good. you can do a lot with a basic tomato sauce, you could add spices, or beans and have a meatless chilli con carne.

or... *thinks* i agree with the stir fry suggestions. i'll ask my housemate, she's vege and she cant eat cheese, so she might know some other options.

oooh, i know what she has quite a lot, she likes to have tortillas (sp) and cook up some veges with some spices and then have them stuffed in the tortilla.

Ah, yes, Rachel reminded me of something else I like to make.. thank you for refreshing my mind, dearie. :P

I like to make burritos with cheese, kidney beans (can you tell what my favorite kind of beans are?), broccoli and onion dip. :]!!!!!!!!! Tis quiet good. Of course the dip is optional, I have no idea what's in it.

Fry up some vegetables or boil them, and put them in rice or noodles. Really yummy.
My mom's really good with noodle/rice recipies. Just put some stuff in. sauces, vegetables, whatever. Yummy.

If you're in for a treat, strawberries covered in chocolate are absolutely fabulous. Only you might have to find... vegan chocolate?

Hmm. I think some Japanese food might help. If you can, Miso soup. It's tofu, seaweed and scallions. Also their noodles, udon/ramen/soba with carrots, beansprouts, and whatever variety of vegetable. Sushi rice (with or without the vinegar) is a good accompaniment, since it's fluffy with a bit of chewy-ness to it. That's all I can think of though.

Guacamole tostadas. Tostadas layered with guacamole, black beans, lettuce and tomato. I add cheese, as well. But, my guess is that vegan cheese would be a good substitute. The guacamole is so easy to make. Smash up an avocado, add a little lime, olive oil, and salt (and cilantro if you have some) and you are good to go.

I have a suggestion. Go online to check out recipes. My guess is that you will find a ton of them. I am amazed at all of the stuff I can find online. How did we live before it?????

I've kind of been falling into a rut with this..

Hummus in a pita with shredded carrots and bean sprouts (I don't eat animal producs either)

It's good, but it's kind of getting boring.

Dark chocolate is vegan. =)

I can't think of much that doesn't have cheese. Baked potatoes are nice, though. =P

yeah, there's alsorts you could do with a baked potato! my housemate did something with some tomato and some beans cooked up in one of hers.

Speaking of potatos, that reminds me of a thingy I did in food tech earlier this year - pretty basic, but it was a healthy option thingy and probably vegan :P Simple to make, but it (well, mine did :P) looks scrummy.

See, you get your basic baked potato. Then you cover it in pasta (different colours for prettyness :)), carrots, sweetcorn and lots of lettuce. I put butter on mine to make it taste nicer, but unless you can find a substitute? Anyway, with it all piled up and served with a nice warm roll, it was quite nice :)

And the semi-sweet kind too, a lot of the time, depends where you get it from...

Some brands have it in, some brands don't. Gheradelli (which I can't spell, you get the drift of it) semi-sweet chocolate chips are vegan, I think, Safeway brand chocolate chips, and Whole Foods has some too, I believe.

Same with dark chocolate, actually, I've seen tons of non-vegan dark chocolate.
