I <3 cooking! It's almost as fun as eating :P So, I thought it'd be nice to share some tasty recipes with the rest of the forum (and hopefully get some back!).

Sweet Potato Wedges

Gas Mark 5

Sweet potatoes (one per person), each cut lengthwise into 6 wedges
2 tsp vegetable oil
1/4 tsp paprika
1/8 tsp garlic powder
Black pepper

1. Place potatoes in a bowl. Add oil, paprika and garlic powder. Season to taste with pepper. Toss to coat. Transfer to baking tray. Bake for 25 minutes or until tender and golden, turning once.

1 banana
1 cup fresh or frozen berries (any combination)

I just came across a recipe yesterday that sounds delicious. <3

Original Nilla Banana Pudding

Layers of Nilla wafers, creamy pudding and fresh banana slices are the stars of this American classic.

Prep: 30 mins - Cook: 15 mins - Cool: 15 mins

3/4 cup sugar, divided
1/3 cup all-purpose flour
Dash salt
3 eggs, separated
2 cups milk
1/2 teaspoon vanilla extract
45 NILLA Wafers, divided
5 ripe bananas, sliced (about 3 1/2 cups), divided
Additional NILLA Wafers and banana slices, for garnish


1. Mix 1/2 cup sugar, flour and salt in top of double boiler. Blend in 3 egg yolks and milk. Cook, uncovered, over boiling water, stirring constantly for 10 to 12 minutes or until thickened. Remove from heat; stir in vanilla.

2. Reserve 10 wafers for garnish. Spread small amount of custard on bottom of 1 1/2-quart casserole; cover with a layer of wafers and a layer of sliced bananas. Pour about 1/3 of custard over bananas. Continue to layer wafers, bananas and custard to make a total of 3 layers of each, ending with custard.

3. Beat egg whites until soft peaks form; gradually add remaining 1/4 cup sugar and beat until stiff but not dry. Spoon on top of pudding, spreading evenly to cover entire surface and sealing well to edges.

4. Bake at 350°F in top half of oven for 15 to 20 minutes or until browned. Cool slightly or refrigerate. Garnish with additional wafers and banana slices just before serving.

Makes 8 servings

287 calories, 6 g protein, 50 g carbohydrate, 7 g total fat, 2 g saturated fat, 117 mg cholesterol, 134 mg sodium, 1 g dietary fiber

Nachos the Easy Way (better than the "real" nachos, IMO)
1 Plate
1 Bag of tortilla chips (you don't really need many)
1 Bag of shredded cheese (again, you don't need that much)
1 Microwave

Put a layer of chips on the plate, cover with a layer of cheese, and place in microwave for 35 seconds.

It's the only one I can think of, but it's good.

emma.. you dont know if the wedges are nice, you havent tried them made the proper way :P

Here's a variation on my pudding recipe from the last issue of Pink Ink:

Pudding’s High-Protein Vegan Strawberry Pudding

* 1 lb. firm silken tofu

* ½ cup cool water

* ½ cup fresh halved strawberries

* ½ cup sugar

Cube the tofu and place in a food processor. Blend on high until smooth. Add water, half of the strawberries, and sugar. Blend until all lumps of powder have disappeared. Use remaining strawberries as a garnish. Refrigerate for 1 hour and enjoy!

Potato Nachos
Some potatoes (whole)
Your choice of nacho toppings

Slice the whole potatoes into slices (peel beforehand if you wish), then put your favorite nacho toppings on, then microwave. They're healtheir than regular nachos, and they taste great.

My mom makes an awesome no-bake cheesecake type thing for the 4th of July every year.

The recipe can be found here :)

2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened

1/3 cup sugar

2 cups thawed COOL WHIP Whipped Topping

1 HONEY MAID Graham Pie Crust (6 oz.)

1 pt. (2 cups) strawberries, halved

1/3 cup blueberries


BEAT cream cheese and sugar in large bowl with electric mixer on medium speed until well blended. Gently stir in whipped topping.

SPOON into crust.

REFRIGERATE 3 hours or until set. Arrange strawberries and blueberries in rows on top of cheesecake to resemble flag. (Or, arrange fruit in other desired design on top of cheesecake.) Store leftover cheesecake in refrigerator.

This is a great recipe I like to call the HxHr Shippers Cake.

Melt two sticks of butter into a microwave-safe bowl. Add 1 cup milk and three eggs. In another bowl, sift 3 cups flour, 1 cup sugar, 1 cup brown sugar, 2 tbsp baking powder, and 1 tbsp baking soda. Mix the two mixtures together in a big bowl and add 2 tsp vanilla extract. Heat oven to 400 degrees Fahrenheit. Put the mixture into a non-stick pan and put it in the oven. Put it in there for 4 hours, or until black and smoking. It should taste utterly disgusting (even the pigeons won't eat it). Hence, the "HxHr Shippers" Cake.

Have I ever told you how much I loved you? Because I do. Though a drowned pumpkin pie is also effective.

(well, aside from my being open to pretty much all ships, so I do read H/Hr...)

At my home we just call them 'Wraps'
Ingredients:
600 grams of ground beef
One large onion
One can of crispy corn
Two large cans of red chili beans
One red paprika
One pack of salsa wraps
Tabasco
Cumin

Fry the ground beef together with the onions, until it's done. Then put a fire under a large pot, throw in your ground beef and onions, next all your vegetables together, and add cumin and tabasco to your liking. Mix and let it stew on a gentle fire until the vegetables - mainly the paprika - are soft enough to your liking, and it's ready to serve.
Now, the wraps suggest you should 'wrap' it in the wraps, but I usually can't be bothered, and also like a big plate. So what I usually do is just leave it open and pile a great heap onto the wrap, eat it with a fork, and then when there'salmost nothing left, just fold it closed andin half like a sort of pancake.
