I'm not too sure about who I want to meet but having lived in Los Angeles for five years, I had a lot of celebrity sightings/encounters.
The most notable one was several years ago at Saddleranch on Sunset Blvd. I was there with a bunch of friends for a birthday and we had an awesome table right next to the mechanical bull. A waitress came over and told us that David and Victoria Beckham wanted to trade tables with us and would give us a round of shots in exchange. We agreed (hey, free alcohol) and got their autographs as well.

my boyfriend would've loved that, he's very into football.

Well, if you're on Sunset Boulevard you're almost guaranteed to see someone famous.
And this is a bit off-topic, but when I went to CA for a 2-3 week vacation, we drove on I-5 through L.A. and I saw a Lambourghini being towed (like it had broken down). That was kinda weird.

I attended elementary school with Bug Hall for about a week lol I also met Bruce Willis when he was filming Pulp Fiction at the apt. building I used to live in.
And my dad used to be friends with Bobby Chacon, a former boxer.
