Oh, this is going to sound silly... but I really like the BeeGee's "Emotions" covered by Destiny's Child.
Unlike rock bands covering songs, this one isn't destroyed.

I've only heard The Phantom of the Opera by Me First And The Gimme Gimmes
The album is called Me First And The Gimme Gimmes Are A Drag and it's covers of songs from musicals.

Well, Angels by Robbie Williams is not too shabby.. though not my favorite song.. but perhaps by favorite cover... I think... maybe!

Geez, can't think of any other cover songs I really like at all.

Oh, now I know! I really like Janet Jackson's cover "Got Til It's Gone", that's a cover :P
